Sauteed Potatoes and Carrots

A mix of small potatoes and carrots sauteed in seasoned olive oil.

Ingredients

  • 4 cups water
  • 4 cups water
  • 1 cup baby potatoes, quartered
  • 1 cup carrots, peeled and cut into 1/2-inch-thick slices
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper

Directions

In a 2- to 2-1/2-quart pot bring the water to boiling. Add the potatoes and carrots and cook, covered, in the boiling water for 5 to 7 minutes; drain off water.

Add olive oil, Italian seasoning, salt and pepper (optional) in a saucepan over medium heat. Stir in potatoes and carrots; sauté for 10 minutes.
