Nacho Supreme Rice
A quick and easy fiesta dinner.
Ingredients
- 1 package Knorr® Mexican Rice or Spanish Rice
- 1 lb. ground beef
- 2 cups shredded romaine lettuce leaves
- 1 cup shredded Mexican cheese blend
- 1 cup chopped tomatoes
Directions
In medium saucepan, bring 2 cups water, 1 tbsp. of vegetable oil (optional) and contents of rice package to a boil.
Stir. Reduce heat and simmer covered 7 minutes or until rice is tender. Let stand at least 2 minutes and set aside.
Brown ground been in large, nonstick skillet over medium-high heat. Drain and return beef to skillet. Stir in the rice.
Arrange rice and beef mixture on serving platter, then top with lettuce, cheese, and tomato. Serves four.
Tips: You can also add optional nacho toppings such as guacamole, sliced olives, sliced pickled jalapeno peppers, and/or sour cream. For lower-fat alternative, substitute 1 can of beans, rinsed and drained, for ground beef (stir beans into rice during the last 5 minutes of cook time.
