Southern Homestyle Beans
Southern beans flavored with bacon, onion, and just a touch of brown sugar.
Ingredients
- 3 cups frozen butterbeans, lima beans, or blackeyed peas
- 2 10½-oz cans of chicken stock
- 5 bacon slices, diced
- 1 medium onion, chopped
- 1 tbsp brown sugar
- 1 tsp minced garlic
- 2 tsp salt
- 1 tsp cracked black pepper
Directions
Place bacon and onions in a medium saucepan and saute 4-5 minutes. Add chicken stock, garlic, brown sugar. Bring to a boil, then reduce to medium low. Simmer for 10 minutes and add beans. Beans should be covered with about an inch or so; if not, add more stock or water.
Return to a boil; reduce heat to low, and simmer, stirring occasionally, 2 hours or until beans are very tender and liquid is thickened. Stir in salt and pepper.
Slow Cooker Option: Once the stock has simmered for 10 minutes on the stovetop, you can finish the recipe in a slow cooker on high for 4 hours or low for 8 hours.
